What Did You Do This Weekend?

It is Monday morning. The weekend is over. I am sitting here wondering why my weekends seem to go by so fast. So here is my weekend recap.

Friday I woke up at 5am to participate in the early morning spinning class. I was the only participant. There is a good and bad side of being the only participant. The good – the instructor knows me and I get individual attention. The bad – I can’t slack off at all. She is always calling out my name telling me to go faster. I know it is for my good that she does this but sometimes it is irritating. But I then try to do whatever she is saying she wants me to do.

After spinning, I came home and worked on the grocery list. The rest of the morning was spent at my favorite grocery store – HEB.

After lunch, it was salsa making time.

Marc, Emily, and I then went to Gina’s Restaurant for an early supper. Gina’s is a new Italian restaurant in Friendswood. The last few times we tried to eat there the waiting time for a table was too long. By going early, we were able to get a table.

Then it was movie time. We went to see “This is the End.” As Marc would say – that was two hours of my life I will never get back. I thought the movie was horrible. It was horribly crude and nasty. As you can guess, I did not like the movie.

Saturday I went to spinning class again. Then all morning and afternoon I made salsa.

Sunday I went to worship services in the morning. I made salsa in the afternoon. In the evening, I went to worship services again and then helped decorate for vacation bible school.

I was busy this weekend. I was able to relax some so I would say I accomplished a lot.

Some of the tomatoes from my garden.

The results of my canning efforts this weekend.

So far this year I have processed 35 pint jars of salsa. I have enough tomatoes for one more canning session. Each session produces 5-6 jars of salsa. So my spring tomatoes will have produced approximately 40 jars. Not to bad for only having 6 tomato plants.

What did you do this weekend?

Random Thoughts on December 10, 2011

  1. Well, I finally have a Pinterest account.  It seemed to me that I have been trying to get an account since Thanksgiving.  Finally, after begging my daughter for an invitation I was off the waiting list and accepted.  I am still trying to learn how it all works.  I do know that there are a lot of interesting things on the internet…. like Choffy.
  2. Yesterday afternoon my Choffy came in the mail. I was very impressed with how fast it came, too.   Choffy is roasted Cocoa beans that you brew like you do coffee.  I love dark chocolate so when I saw this on the internet I knew I would like it.  I decided to make some  in my regular coffee maker.  (The recommended method is to use a french press.)  It look a long time for the water to drip through to the pot.  I stirred in a little bit of Stevia and some half and half into my cup.  It had a good chocolate taste.  Anyway, I decided that while I was out shopping I would  buy a french press.
  3. What was I thinking today —-  During the week, I made my annual mammogram for Saturday. For starters, I was paranoid that I would forget my appointment.  I could not concentrate on anything prior to the appointment.   I also thought since the mammogram place was by the mall that I would do a little shopping – pick up some Christmas gifts and of course a french press – surely it would not be to crowded yet. Was I wrong!  The traffic was a nightmare.  The stores were crowded.  The checkout lines were long.  I did get the french press but I had to bite my tongue when a lady cut in front of me in the check out lane.
  4. Tonight for supper I decided that I would make a pizza.  Usually, my husband likes to have just a pepperoni or hamburger pizza.  But because he was working I could be a little creative with my toppings.  So I made a hamburger, Kalamata olives, spinach, bacon pizza.  It was pretty tasty.

Now I am pretty tired — I think I will get ready for bed and read the last few remaining chapters of the “Hunger Games”.
